Seeded wheat boule — roasted sunflower & flax seeds mix into a wheat dough for this satisfying blue house staple

Buckwheat + fresh herb boule — toasted buckwheat groats mix into a wheat-rye flour along with lots of minced fresh herbs [parsley, maybe dill, perhaps mint & watercress] for a hearty fresh tasting loaf foreshadowing the coming spring

Borodinsky rye — a Russian style rye brick with fermented red rye malt for a characteristic coffee-chocolate flavor and spiced with grown and whole coriander seeds
